Mediterranean Chicken
Ingredients
- 1 Whole Chicken (Spatchcocked)

Mediterranean "chimichurri" marinade:

3 tbsp olive oil

3 tbsp lemon juice (fresh is best)

3 cloves garlic, minced
-
1 tsp fresh oregano
-
1 tsp fresh thyme
-
1 tsp fresh mint
-
1 tsp fresh dill
-
Beef's Best Friend -which is also a great all purpose seasoning

Keep to the side - chopped fresh parsley, mint and lemon for garnish

Instructions

Marinate/Prep:
combine olive oil, lemon juice, garlic, oregano, thyme, mint, dill, and seasoning Add chicken and marinate for at least 30 minutes (or up to 4 hours) in the fridge. -
Take out of marinade and give another dusting of Beef's Best Friend

Cook:
-
Smoker: Indirect at 275- 300
-
Cook until internal temp is 150 in breast/160ish in thigh
-
Bump to 350 until internal is 165 in Breast/175ish in thigh
Let rest for 5 minutes before slicing. Top with chopped Parsley, mint and a squeeze of lemon after slicing. Serve with veggies, rice or any of your favorite sides

Save leftovers, get an eggroll wrapper - chop up chicken and veggies, add feta, -- roll it up - fry in oil at 325-350 and dip in tzatziki (will post full recipe at some point)
