Mediterranean Chicken

Ingredients

  • 1 Whole Chicken (Spatchcocked) 

  • Mediterranean "chimichurri" marinade:

    • 3 tbsp olive oil

    • 3 tbsp lemon juice (fresh is best)

    • 3 cloves garlic, minced

    • 1 tsp fresh oregano

    • 1 tsp fresh thyme

    • 1 tsp fresh mint 

    • 1 tsp fresh dill

    • Beef's Best Friend  -which is also a great all purpose seasoning

  • Keep to the side - chopped fresh parsley, mint and lemon for garnish

Instructions

  1. Marinate/Prep:
    combine olive oil, lemon juice, garlic, oregano, thyme, mint, dill, and seasoning  Add chicken and marinate for at least 30 minutes (or up to 4 hours) in the fridge.

  2. Cook:

    • Smoker: Indirect at 275- 300

    • Cook until internal temp is 150 in breast/160ish in thigh

    • Bump to 350 until internal is 165 in Breast/175ish in thigh

Serve:

Let rest for 5 minutes before slicing. Top with chopped Parsley, mint and a squeeze of lemon after slicing. Serve with veggies, rice or any of your favorite sides

Save leftovers, get an eggroll wrapper - chop up chicken and veggies, add feta, -- roll it up - fry in oil at 325-350 and dip in tzatziki (will post full recipe at some point)
